If you’re looking for something easy to cook up on a busy day, then this yogurt rice makes for a wholesome one-pot meal. It is really easy to make and hardly takes 10 to 15 minutes to put together (provided you have some leftover plain rice of course!).

It is healthy:

It is a good probiotic dish, which is very beneficial to health. This is because the base of this dish, is yogurt. It is nutritious and can improve digestion and also enhance gut health.

It can be made vegan:

This recipe is made with yogurt (which is not vegan). Nevertheless, for vegans, you can substitute the yogurt with vegan yogurt and make this dish just the same.

Ingredients You Require for this Recipe

The base ingredient of this yogurt rice, is of course – yogurt, mixed with rice. There are other condiments like spices and flavouring added to enhance and enrich the flavour of the dish.

Yogurt rice is a traditional dish that originated in South India and is probiotic in nature. It can keep the body cool, promote energy and also aid digestion.

Healthy Yogurt Rice

  • 2 Cups Cooked Rice
  • 1 Cup Yogurt
  • 1/2 Tsp Coconut Oil
  • 1 Tsp Mustard Oil
  • 1 Tsp Cumin Seeds
  • 1 Tsp White Lentils
  • 2 Dried Chilies
  • 10 Curry leaves
  • Coriander Leaves
  1. Into a mixing bowl, add in the rice. To it, add in the yogurt and give it a mix. Sprinkle some salt to taste. Set it aside.

  2. Take a frying pan and add in the coconut oil and let it get heated. Once heated, add in the mustard seeds and let them begin to splutter.

  3. After the mustard seeds have spluttered, reduce the heat and add in the cumin seeds and fry for a few seconds, before adding in the white lentils. Fry well for another few seconds, before adding in the dried red chilies and curry leaves. Turn off the heat.

  4. Pour this mixture on top of your yogurt mixed rice; give it a mix and its ready to consume.

  5. This step is optional – Chop up some coriander leaves (finely) and sprinkle it on the top for garnish.

Alternative Ingredient Substitutes

Oil: In case you do not have coconut oil, you could use any other oil of your choice for this recipe. The reason coconut oil is used is because of its distinct flavour.

Ghee: You could also substitute the oil with ghee in this recipe, as it has a lovely flavour and it is also a healthier alternative to oil.

Green Chillies: If you do not have dried red chillies, you can slit or finely chop one long green chilli to substitute the red chillies in this recipe.

Additional Ingredients:

Pomegranate Seeds: You can add in ¼ of a cup of pomegranate seeds for some additional flavouring.

Ginger: When you fry your other ingredients in oil, you can add in ½ a tsp of finely grated ginger as well, for some additional flavouring.

Notes:

  • You could even use any leftover plain rice of any type for this recipe.
  • Place the yogurt out of the refrigerator to sit at room temperature for an hour or so before making the yoghurt rice.
  • Make sure to heat the rice before mixing it with the yoghurt, unless you prefer cold yoghurt rice.
  • For vegans: You can use vegan yoghurt in the same quantities, to make vegan yoghurt rice.
